Roasted Yams

These add colour and flavour to a meal and I’ve yet to find anyone who doesn’t like them. They are quick and easy to prepare.

1 large yam, peeled (or just scrubbed) and cut into 1/4″ thick slices
2 tbsp extra virgin olive oil
1 tsp. coarse salt
1 tsp. fresh ground pepper

herbs of your choice–fresh rosemary is good. Toss the yams in a bowl with the oil and seasonings. Spread out on parchment lined baking sheet so they are not touching one another. Sprinkle with salt and pepper. Bake at 350 for 15 to 20 minutes until edges start to curl.
