Whenever I eat guacamole, I can feel my feet in the warm sands of the beaches of Mexico!

1 ripe avocado
2 tbsp finely chopped onion
2 tbsp finely chopped cilantro
6 chopped sweet grape or strawberry tomatoes
1 clove garlic, minced
2 tbsp lime juice
1 tbsp lemon juice
pinch of coarse salt
freshly ground pepper

Mash avocado, leaving it as lumpy or as smooth as you like. Gently stir in remaining ingredients, adjusting seasonings to your taste. Allow flavours to blend before serving. Serve with tortilla chips or with Halibut Tacos.
