Our favourite salsa, especially when made with vine-ripened tomatoes. The fresh lime flavour always reminds me of all the fun times we’ve had in Mexico.
1/2 sweet white onion, finely chopped
2 medium tomatoes, finely chopped
1/4 cup finely chopped red bell pepper
2 tbsp finely chopped cilantro
1 tbsp finely minced jalapeno pepper
juice of one lime
pinch of coarse salt
Combine all ingredients and allow flavours to blend. Serve with taco chips or with Halibut Tacos.
