Roasted Pears with Caramel Sauce

We don’t usually decadent desserts on Wednesday nights, but Australian Bartlett pears were on sale today and I couldn’t resist. We loved this dessert. I’ll also use this recipe in the fall when local pears are plentiful. I took the picture before I remembered that I had forgotten to put the walnuts on top.

2 tbsp. butter
2 tbsp. brown sugar
pinch of ground cloves
2 pears, sliced in half and cored
2 tbsp. plain yogurt
2 tbsp. chopped walnuts
caramel sauce (I happened to have a jar of Chardonnay Caramel Sauce from Beringer’s Winery in Napa, bought on a recent trip . . .yum . . . but any caramel sauce will do.)

Preheat oven to 400 degrees and place rack in center of oven. Put the butter in a small glass baking dish, place in oven until melted. Stir in the brown sugar and cloves then place pears cut side down in the brown sugar sauce. Bake for 30 minutes. Turn pears over, baste with the sauce and bake a further 10 minutes until tender and glossy.
Arrange in a bowl, then top with a dollop of yogurt, sprinkle with walnuts and drizzle caramel sauce on top. Definitely comfort food.
