Canada Day Strawberry Flan


For our annual “Welcome to Summer/Canada Day” family barbecue at the lake, I offered to bring dessert. Red and white seemed appropriate for the occasion and the Fresh Strawberries sign at Silverside Farm caught my eye on my way home today. I decided to use our favourite flan recipe and tweak it a bit.

Crust
2 cups chocolate cookie crumbs
1/3 cup melted butter
Preheat oven to 350 degrees.
Mix cookie crumbs with melted butter. Pat into the bottom and sides of a 10-inch removable bottom tart pan. Bake for about 8 minutes. Cool.

Filling
8 oz. light cream cheese, softened
1/4 cup sugar
2 tsp. organic lemon juice
1/2 cup whipping cream
sliced fresh strawberries
1/4 cup red currant jelly, gently heated in microwave to thin it a bit
Mix cream cheese, sugar, and lemon juice with an electric mixer until blended. Add whipping cream and blend at high speed until light and fluffy. Spread over crust and chill for several hours.
Arrange sliced berries on top. Drizzle jelly on top. Chill. Garnish with chocolate curls or mint leaves. Happy Canada Day!
