“I don’t usually like sweet potatoes, but they’re great when they’re done like this.” That was a comment I overheard from the other end of the table at our last dinner party. I like sweet potatoes no matter how they’re cooked, but these ones are particularly delish, and I’ll make them again and again because they’re fast and easy.
Scrub 2 large sweet potatoes. Leave the skin on and slice into 1/4 inch rounds and place in a large mixing bow. Cut one large onion into rough chunks and add to the bowl. Toss with about 2 tablespoons of extra virgin olive oil, 2 teaspoons brown sugar, coarse salt and freshly ground pepper. Place in a large oblong ovenproof dish and roast at 400 degrees until potatoes are tender. Remove from oven and quickly toss in about 1/2 cup or more of Greek style feta cheese so that it melts slightly among the warm potatoes. Sprinkle with lemon juice and serve.
