Laura’s Granola

The sky is the limit with this one. Use whatever combinations of grains, seeds, nuts, or dried fruit you like. This one is Laura’s specialty.

Mix together
5 cups rolled oats
1 cup chopped walnuts
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup unsweetened coconut
1/2 cup oat bran
2 tbsp. cinnamon

Whisk together
1/4 cup water
1/2 cup oil
1 tsp. vanilla
2/3 cup honey or maple syrup

Combine the wet and dry ingredients and stir thoroughly.

Spread out on two parchment-paper lined baking sheets. Bake at 250 degrees F. for 60 minutes, stirring every 10 minutes. Savour the aroma of toasted oats and cinnamon.

Remove from oven when golden brown. Stir in 1 cup dried fruit, like cranberries, blueberries, raisins, etc. when the mixture is cool. Store in an airtight jar.
Serve with Greek yogurt, milk, almond milk or all by itself straight out of the jar.
