Saskatoon and Blue Cheese Dip

I stopped in at the Saskatoon Berry Farm to pick up just a few berries to make one of my favourite summertime desserts: saskatoon berry tarts. I left with a 5 pound box, a jar of jam, a handful of their recipes and returned two days later for another load. These berries have such a wonderful mellow taste, “subtle” as Foster says, and one bite just leads to another. They freeze easily, just like blueberries.

This is an oil-and-balsamic vinegar dip with a difference! You could substitute any berry jam successfully. Serve surrounded by a slice fresh baguette for dipping.

1/4 cup quality balsamic vinegar
1/4 cup Saskatoon (or other berry) jam
2 tbsp red wine
1/4 cup crumbled blue cheese
1 garlic clove, crushed (optional)
salt and freshly ground pepper
1/2 cup EV Olive oil

Mix all the ingredients except the olive oil in a food processor. Pour in the oil in a steady stream until well combined. Cover and refrigerate, giving it a quick whisk before serving.
